I always keep frozen sliced bananas in the freezer. They are great for smoothies, soft serve vegan ice cream, and dipping in chocolate. My son loves them on rice cakes slathered with almond butter. :)
This creamy, healthy blueberry smoothie has an extra dose of greens (which you can't taste at all). I use unsweetened coconut milk, but any milk will work. If you add more ice and decrease liquid, this also makes a delicious high protein blueberry cheesecake ice cream.
I know what you’re thinking: Spinach and cottage cheese?! Blech. Pass. But I’m telling you, you can’t taste the spinach at all! And the cottage cheese gives that cheesecake flavor and extra protein boost.
Another alternative is replacing the spinach for more frozen fruit and swapping the cottage cheese for plain or vanilla yogurt. But try it as written and see for yourself how good it is!
Blueberry Cheesecake Smoothie
1/4 cup frozen spinach
4 slices of frozen banana
1/2 cup frozen blueberries
1 cup of ice
1/3 cup cottage cheese
1 scoop of vanilla protein powder (I use Optimum Nutrition whey protein for this)
1/2 cup coconut milk or other milk
1. Blend together until smooth. Use a tamper to make sure everything gets blended evenly.
